It’s hard to beat a delicious, buttery Coffee Cake. Coffee Cake is one of those foods that seems perfectly fitting any time of the day. From breakfast to brunch, afternoon tea to evening dessert, it’s always a good time to enjoy coffee cake. This easy Sour Cream Coffee Cake recipe is one that you’ll want to add to your collection, and make time and time again.
Some coffee cakes scrimp on the streusel part of the equation. That however, is not the case with this coffee cake recipe. This recipe comes from one of my favorite cookbooks, The Weekday Lunches & Breakfasts Cookbook by Mary Younkin of Barefeet In The Kitchen. Mary is one of my dearest friends and I’ve been fortunate to get to sample her cookbook recipes when she is developing them. The delicious and abundant buttery streusel in this recipe made it an instant favorite for me.
Coffee Cake Recipe
Truth be told I meant to share this recipe with you some time ago, when this cookbook was first released. Somehow life got crazy, as it always does, and I didn’t manage to do that. But a scrumptious and easy coffee cake recipe is better late than never, right? Here’s how Mary describes this recipe in her book:
“Cinnamon Sour Cream Coffee Cake layered with cinnamon streusel is a snack that I can’t resist. Whether it’s early in the morning with a cup of coffee, mid-afternoon, or late at night, this cake is a favorite. Heavy on the cinnamon streusel, this cake is literally half streusel. No one has been able to resist a slice yet.”

A delicious and easy Sour Cream Coffee Cake recipe packed with lots of crumb! If you love a good crumb cake or coffee cake, this is perfect!

Ingredients
Cinnamon Streusel
- 1 1/3 cups all-purpose flour
- 3/4 cup light brown sugar packed
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 3/4 cup butter melted
Cake
- 1/2 cup butter room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 cup sour cream
Instructions
Cinnamon Streusel
1 1/3 cups all-purpose flour
3/4 cup light brown sugar packed
1 tablespoon cinnamon
1/2 teaspoon nutmeg
3/4 cup butter melted
Cake
1/2 cup butter room temperature
1 cup sugar
2 large eggs
1 teaspoon pure vanilla extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1 teaspoon cinnamon
1/2 cup sour cream
Cinnamon Streusel
Combine the flour, brown sugar, cinnamon, nutmeg, and butter in a medium bowl. Mix together with a fork until clumps are formed.
Cake
Preheat oven to 350° F. and grease a 9 X 9-inch pan with butter.
In a medium mixing bowl, whisk together the flour, baking powder, and cinnamon.
In a large mixing bowl, cream together the butter and sugar until light and fluffy, approximately 3 to 4 minutes.
Add the eggs and vanilla and mix well, scraping down the sides of the bowl as needed.
Add the flour mixture.
Add the sour cream or Greek yogurt and mix until well combined.
Pour half of the cake batter into the prepared pan and with an offset spatula, spread to cover the bottom.
Sprinkle half of the cinnamon streusel evenly over the cake batter.
Cover with remaining batter and then sprinkle again with the remaining streusel.
Bake for 30 - 35 minutes, until lightly browned and a toothpick inserted into the middle comes out with moist crumbs.Cool completely before slicing.

Mines been in the oven for 40mins and it won’t cook in the centre. It’s all wobbly and raw. I covered it with tin foil to stop it from browning and popped it back in. Help! 😭

Can you double this in a 9 x 13 pan? Would the bake time change?

I have made this coffee cake so many times, and my family is absolutely obsessed with it. But my brother is lactose, and unfortunately can not eat it with the sour cream. I was wondering if there is any substitution for the sour cream that is for lactose people. Thank you!!Reply

I think you can find lactose free, or very low lactose, yogurts. I would maybe try that. It’s not going to be quite the same, but that’s the best thing I can think of.
