Made with only 4 ingredients, these Strawberry Coconut Popsicles are my new favorite summer treat! Healthy, yet decadent enough to satisfy any sweet tooth!
It seems like popsicles are all the rage right now and I can see why. They’re easy to make, they taste amazing, and with temps rising to the 80s and 90s this week, a nice, cool treat is just what I need!

These Strawberry Coconut Popsicles are officially my go-to summer treat.
Full of greek yogurt and fresh fruit, the ingredientlist is short, the popsicles are creamy dreamy, and you better believe they’re healthy enough to enjoy without the guilt!
If you’ve ever met me, you know I have a ridiculously large sweet tooth.
Candy? It’s own food group.
Brownies. I crave them daily.
Ice Cream? My very favorite thing in the whole wide world. Liiiike I would gladly skip dinner and eat ice cream instead.
That being said, I’m not 12 anymore, so I unfortunately can’t eat #allthethings wheneverI want.
That’s where theseStrawberry Coconut Popsicles come in. They’re still plenty sweet to satisfy my sweet tooth, but healthy enough that I don’tfeel bad about having one every.single.night.
Nope. Not. At. All.
Since I’ve been eating these like candy 😉 it’s a good thing they’re super simple to make.
There are two layers to today’s recipe:
#1 The Coconut Layer
#2 The Strawberry Layer
Let’s start with the coconut. Simply place greek yogurt (vanilla or toasted coconut if you can find it), sweetened coconut flakes, and canned coconut milk into a food processor.
Pulse together until well combined and smooth-ish. It will be thick and chunky and that’s exactly what we want. It gives these popsicles ahhh-mazing texture.
Set this mixture aside while you makethe strawberry layer.
Place strawberries and vanilla greek yogurt into the food processor and process until smooth. This layer will be much thinner than the coconut layer.
Then all that’s left is to pour the layers into your popsicle mold. This would be a really fun project with kids – let them “design” the popsicles however they want!
For me? I used about 2 tablespoons of strawberry, then I toppedit with about 1 and 1/2 tablespoons of the coconut layer, and then finished off thepopsicles with more of the strawberry mixture!
Let ’em freeze overnight andenjoy!
The coconut layer is subtly sweet, ultra creamy, and full of chewy texture from the coconut flakes which works a.m.a.z.i.n.g.l.y.with the fresh, tart, tastes like summer strawberry layer.

Ingredients

Coconut Layer
- 1 cup vanilla greek yogurt or toasted coconut
- 1/4 cup canned coconut milk
- 1 cup sweetened coconut flakes
Strawberry Layer
- 1 pint strawberries stems removed
- 1 cup vanilla greek yogurt
Instructions
Coconut Layer
Place ingredients into food processor.
Blend until smooth.
Transfer to a bowl.
Strawberry Layer
Place ingredients into food processor.

Assembly
Alternating flavors, pour coconut/strawberry mixtures into popsicle molds until full.
Place the "lid" of the popsicle mold on and insert popsicle sticks.
Freeze overnight.
To remove
Submerge half of the popsicle molds in warm water for a few minutes, or until popsicles easily "pop" out.
Enjoy immediately or re-freeze on a baking sheet.
Once re-frozen, place in a gallon sized baggie and store in the freezer!

Notes
Just a heads up, these popsicles have a ton of texture: chewy bits from the coconut flakes, and seeds from the strawberries. The textures are absolutely amazing, but these are definitely not smooth like store bought popsicles. 🙂
