Egg bites are easy to eat on the go and are delicious. That’s probably the reason that they are one of the most popularStarbucks hot breakfastitems. But at five bucks a pop, your stomach may be happy, but your wallet definitely won’t be.
You can make them at home for a fraction of the price, but to get the same velvety consistency as the ones they serve at Starbucks, you are going to need a sous vide cooker.

What the Heck is Sous Vide Cooking?
Sous vide is French for ‘under vacuum’ and has been a popular cooking method at some of the fanciest restaurants since the 1970s. But it has only been within the last few years that the sous vide cooking method has become popular for home cooks. And despite its elitist culinary beginnings, it is extraordinarily easy to master.
Sous vide cooking is basically using heated water at a precise and constant temperature and time to cook food. Usually, the food is packed into special sous vide bags that are then sealed using a vacuum sealer. But you can don’t need a vacuum sealer for sous vide cooking.
For example, this recipe calls for cooking in jars, and you can always cook ordinary household food storage bags. A sous vide cooker makes more than just eggs. Prepare perfectly cooked steak, fish, and veggies time after time and without any babysitting. A sous vide cooker is perfect for the starting home cook.
There are lots of different sous vide cookers on the market these days. You can even connect some of them to your smartphone to enable you to cook dinner while you are in the living room!
You can pick up a decent sous vide cooker for between a hundred and two hundred bucks. It may sound a little expensive, but it is no more costly than a good counter-top toaster oven.
Models of Sous Vide That I like
So I have been cooking a bit with Sous vide for a couple of years. I have a couple of recommendations. This isn’t an appliance you are going to use every day, but you can make some very tender steaks, perfectly cooked fish, eggs, and these egg bites.
The Anova brand offers a stick that heats and circulates the water perfectly. You supply the container, and it keeps the constant. It works very well.
The Instant Pot has a new model that is a multi-cooker that has very good sous vide feature. I like this one the best because it has a lid, and it seems to keep the temperature just right. It also slow cooks, sautés and does everything but pressure cook.
What jars do you use?
I use these jars, half-pint Mason jars that I got from Amazon. Plastic molds do not work well in sous vide cooking, for me they always leak. The jars are reusable.

- You can use whole eggs if you prefer.You will need to set your sous vide cooker to a slightly higher temperature to set the egg fully. Try around 172 degrees for the same length of time.
- We designed this recipe for using canning jars.If you choose to use sous vide bags, you will have to play around with the timing since sous vide bags are better at transferring heat to the food, and the eggs will cook quicker.
- Get creative.Substitute your favorite vegetables and cheese, but keep the same portions to ensure good results.
- Reheat in the toaster oven.Pop theegg white bitesinto the toaster oven straight from the fridge cook for about 3 minutes at 425 degrees.

Here’s a list of what you need:
- Egg whites
- Cottage cheese
- Monterey jack cheese, shredded
- Feta cheese
- Butter
- Cornstarch
- Red bell pepper
- Hot sauce, Tabasco recommended
- Green onions
How to Make Starbucks Egg White Bites
- Set sous vide to 167 degrees.
- Into a blender, add egg whites, cottage cheese, Monterey Jack cheese, feta cheese, butter, cornstarch, and hot sauce.
- Blend very well.
- Add red bell pepper and green onions.
- Pulse blender a few times.
- Spray 4 small canning jars with non-stick spray.
- Pour egg mixture into jars. Wipe the rims of the jars and place the lids on the jars.
- Place jars into the sous vide.
- Cook egg whites for about 60 minutes or until they are completely set.
- Remove egg whites from the jars when they are done.
- If desired, pop the sous vide egg bites under a broiler until the cheese begins to brown just before serving.
Recipe Variations
- Use roasted red peppers instead of raw red bell peppers.
- Add mushrooms for an earthy flavor.
- Add spinach for a classic flavor combination.
- Substitute white onion for green onion.
- Sprinkle in fresh herbs for added flavors.
- Use a Keto-friendly thickener for a cornstarch substitute.
Can’t find the canning jars? Consider a trip to a second-hand store where they can often be found. Be sure to check the rims of the jars and make sure they are chip free.

Ingredients
- 8 egg whites
- 5 tablespoons cottage cheese
- 1/4 cup Monterey Jack cheese shredded
- 1 tablespoon feta cheese
- 1 tablespoon butter
- 1 teaspoon cornstarch
- 1 teaspoon red bell pepper
- 2 dashes Tobasco or other hot sauce
- 2 teaspoon green onion tops
Instructions
Set your sous vide for 167 degrees. This will take some time to heat.
So prepare the recipe while this heats up. Into a blender or a food processor add 8 egg whites, 5 tablespoons cottage cheese, 1/4 cup shredded Monterey Jack cheese, 1 tablespoon feta cheese, 1 tablespoon cold butter, 1 teaspoon cornstarch, 2 dashes tabasco. Blend very well.
Add in red bell pepper and green onion tops, pulse blender a few times to chop these vegetables up.
Spray 4 small canning jars (I use half-pint jelly jars) with a non-stick spray. Pour egg mixture into jars. Wipe the rim of the jar to make sure it is clean, then place the lid on the jar. Place jars into the sous vide.
Once the sous vide has reached 167 degrees, cook eggs for about 60 minutes or until they are completely set. If you do not wait until the sous vide has reached proper temperature the eggs may not set fully. If the eggs are soft or appear to be undercooked, cook for an additional 5 minutes.
Remove eggs from the jars when they are done.
If desired pop the sous vide egg bites under a broiler until the cheese begins to brown just before serving.

These are the best I’ve tried. I’d add a little more cheese. I did them in a muffin pan with silicone inserts. Baked in oven on top of half sheet pan filled with boiling water. Added spiniach, smoked gruyere, parmesan and mozzarella. No feta.Reply

This sous vide recipe works perfectly everytime. Absolutely love it. The only change I made was adding the chopped peppers to the top rather than blending them in. I will definitely try the ricotta cheese as that sounds yummy too !

I have not tried this, if I was going to try this, I would guess you would need to cook it at a lower temperature than 300 and watch the time so the eggs do not get rubbery.

Hi! thank you for the recipe! They came out great. I just wanted to let you know that I used Kirkland egg whites. I used one carton, which is equivalent to 10 whole egg whites.

I haven’t tried to freeze them, but I think they would do ok, if you wrapped them very tight, but I would only reheat them after they were completely thawed.

I have made this many times but this is the first Egg White Only recipe I’ve seen. It may be the Italian in me, but I prefer Ricotta to Cottage cheese, much lighter and smoother. I love my Sous Vide circulator and find it is a perfect way to prep meals ahead and allows for quick completion of food after being prep cooked in this method. Thank you for the recipe.
