One of our favourite meals to sit down and share as a family is Fajitas – we make our own fajita spice and either use or freezable sheet pan chicken fajitas or make it fresh on the day if we have a little more time. But for years we have been buying the guacamole from the store and it’s been good but has never lived up to the freshly made we have in restaurantsor that I tried in Central America. So my youngest asked if we could make some together just me and her as normally we are the only 2 that eat it. However, the easy Guacamole recipe to cook with kids was so tasty that my husband and son tried and liked it too. I’ve now been told that I will be making this weekly and not buying the store-bought stuff again.

So the first thing you may notice is that we have switched out the coriander/cilantro for parsley in this recipe. This is partly to do with that’s what we have growing in the garden and the other reason is that I’m one of those people that taste corianderlike soap so if I can avoid it I do!

The parsley has a much mild taste and works to give the guacamole a little extra that it didn’t have before.

Although this recipe is written to be made with kids because it’s easy it’s also ideal for you to make yourself and you can have fresh guacamole next time you decide to have some Mexican food cooked at home.

Top Tip for Getting Kids Chopping

It can be really daunting at first to let your child loose with a knife. My daughter who made this recipe solo with me telling her what to do is only 7! Yet, because since she was a toddler we have let her use a “sharp” knife cutting up the onions, tomatoes and herbs now isn’t a problem.

The best way to do this is to get them used to using knives regularly activities like cutting playdough with butter knives or picnic knives is a good starting activity. We made playdough strawberries and playdough eggs to practice the cutting.

We also started off using safety knives for chopping vegetables – our original set was from Pampered Chef but we switched more recently to some nylon knives which are fantastic for cutting up lettuce (the lettuce doesn’t go brown) but also safe for the kids to use.

Now we use a sharp knife and avoid distractions and as you can see our 7-year-old is confident cutting and chopping onions and tomatoes and loves using our herb Mezzaluna as well.

A simple recipe for guacamole that is so easy that kids and you can cook together.

Ingredients

  • 2 ripe Avocados
  • ½ small Onion
  • 2 small Tomato
  • 2 cloves Garlic Crushed
  • 1 child sized handfull Parsley
  • ½ Lime

Instructions

  • Cut the avocados in half and remove the stone.

  • Scoop out the insides into a bowl.

  • Mash the avocado so that it is fairly smooth.

  • Chop up the onion into small pieces.

  • Add the onion to the avocado and mix.

  • Chop up the tomatoes into small pieces as well and remove the green stems.

  • Add to the onions and avocado.

  • Crush the garlic and add to the mixture.

  • Finely chop some parsley into the mixture too.

  • Juice the lime.

  • Add this to the mix and stir until combined.

  • Scoop into a dish and serve with your favourite Mexican meal or as a dip.

Although we don’t recommend a lot of specialised equipment for cooking with kids we do have a few pieces that we recommend – you can discover exactly what equipment we recommend stocking your kitchen with for cooking with kids. This recipe we made using the equipment below:

For years we have either had a wooden chopping board or a plastic chopping board. But I found that it was getting cut and making it easy for germs to get into so for Christmas I asked for and got a marble pastry/chopping board that can be easily cleaned, it stays cold (great for making cookies and pastries on) and it doesn’t score when we chop up vegetables and fruit on it.

With our own herb garden and pots, I spend a lot of time chopping herbs and although I have used scissors and a knife before a traditional Mezzaluna is safe for kids to use and makes chopping them really easy. I used to have the wooden board for chopping the herbs but now just use our normal board as above.

Most of the chopping we do is for fruit and vegetables so we did spend a little extra and our knives are older versions of these vegetable and fruit knives. They are sharp and can give you a cut but as soon as you feel that your child is ready they are less likely to cut themselves as they do go through the fruits and vegetables easily.

We have a set of blue cereal bowls and tend to use these for serving our guacamole and other items in when we put together a Mexican dinner. It saves getting a separate set especially for the purpose which would take up more room.
