How to Make Pork Loin with Gravy in a Slow Cooker

Aunt Lou here.

So two and a half years ago I shared a recipe with you guys. It is a recipe that I STILL talk about at least once or twice a month when someone asks me about cooking with my slow cookers. What is this recipe? Slow Cooker Steak with Gravy. It is so simple, yet ah-mazing! It is the first recipe that I recommend to people when they tell me they are starting out with their crock pot, but don’t know what to make or really how to use it.
Fast forward to our vacation, I had a pork loin and decided to bring it along with us to make something up while we were gone. I wasn’t quite sure what I wanted to do with it. Then it hit me! I could take my all-time favorite recipe and adjust it to make with my pork loin! So, I give you Crock Pot Pork Loin with Gravy!

Crock Pot Pork Loin with Gravy Notes:

  • This Crock Pot Pork Loin with Gravy recipe adapted from Gooseberry Patch’s Speedy Slow Cooker Recipes is ah-mazing!
  • Pork loin is generally not a super tender cut of meat, so cooking it on low is optimal. It was literally falling apart with just a fork after 5 hours for me. I would recommend cooking it on low instead of high so you can let your crock pot work its magic and make it fall apart tender.
  • I used my2.5-quart crock potfor this yummy Crock Pot Pork Loin with Gravy recipe. It was the perfect size!
  • Check outour favorite Slow Cookers, Pressure Cookers, Multi-Cookers and Air Fryersin our Amazon Influencer Shop.
  • We now have an Instant Pot Version of this recipe too!
  • If you need more servings, you can double or even triple this recipe. You will, however, need to adjust your cooking time and use a larger crock pot. You can use a meat thermometer to know if your meat is done to help with adjusting your cooking time.
  • As with any of our recipes, carb counts, calorie counts and nutritional information varies greatly depending on which products you choose to use when cooking this dish. The auto-calculation is just an automated estimate and should NOT be used for specific dietary needs.
  • All slow cookers cook differently, so cooking times are always a basic guideline and shouldalways be tested first in your own slow cooker and time adjusted as needed.

I’ve made this several times. So easy and so Good! I get going at 10:30 and start on high for about 20 minutes to get things going. Put to low till dinner. Roast comes out very tender. Gravy makes itself. I serve with mashed potatoes, green veg and rolls. Looks like you went to much more trouble. I especially like to put this on when I know it’ll be busy later in the day. Dinner makes itself!

      Hi Stephen!

I haven’t tried it that way, but other readers have and liked it. I would bump up to a 4-quart crock pot for that big of a pork loin and watch it closely. In a larger slow cooker, I think the cooking time would be approximately the same. Enjoy!

Thanks for your recipe I going to make it tomorrow. I’ve got a 6 lb loin and a 9 quart cooker. Going to cut the loin in 1.5 lb sections for cooking. It helps cooking time and tenderness.

Currently, I’m on a Low Carb Diet. I’m not going to add the can of soup due to High Carbs. Going to substitute real sliced mushrooms (1 lb) and chopped onions. Going to add a melted mixture of 1 stick butter and 1 cup half & half heated in microwave for 2 minutes. Stir well to blend. I’m then then going to add 1/2 cup Almond Flour. I’ll spice the loin with salt and pepper, then pour the my mixture over the loin.

Next, I’ll pour four cups of water in microwave safe container, add 4 cubes of chicken broth. Heat for 3-4 minutes. Stir well to dissolve cubes. I pour this around the outside of the loin.

If you like it spicy, add a sliced into the pot!

      Hi Amber!

I used a loin that was only between 1 and 2 lbs, so a tenderloin of the same weight would probably have about the same cooking time. I would guess it will be fall-apart tender and super yummy! Enjoy!

FAQs

Does the pork roast need to be covered in liquid in crock pot? ›

Your liquid should not cover your pork in the slow cooker: it should only come up about a quarter of the way up the sides. The pork will make more liquid as it cooks, and you need to leave room for that.

What happens if you overcook a pork loin in a crock pot? ›

If overcooked, the pork can become dry and could be difficult to slice. Additionally, you can skip the searing step, but the caramelization adds an excellent flavor.

Do you have to brown pork roast before crock pot? ›

Preparing the pork

I also recommend browning the meat slightly prior to slow cooking which will help maximise the flavour. However, this is a step that can be left out if you don't have enough time.

How do you cook a pork loin so it doesn't dry out? ›

Grilling
  1. First, use a high-heat area to quickly brown the meat on all sides. ...

What is the best liquid to cook pulled pork in? ›

Transfer everything to a large slow cooker and add a splash of liquid — water is great, but so is broth, apple juice, or beer if you have them handy. Cover and cook on low until the meat is tender and pulls apart easily.

How do you keep pork loin from drying out in a crock pot? ›

Yes, it's generally recommended to add some liquid when cooking pork in a slow cooker to prevent it from drying out and to help distribute flavors. You can use broth, wine, barbecue sauce, or even just water depending on the recipe you're following.

Why is pork loin tough in crockpot? ›

She says you'll want to avoid cooking pork loin in a slow-cooker for this very reason. "The low heat for a long length of time renders a tough outcome," she explains. Something fattier, like pork shoulder or butt, is a better option for your slow-cooker needs.

Is it better to cook pork in a crock pot on high or low? ›

Set the cooker to low; the high setting will boil the meat instead of braise it, so it's only a quicker trip to an undesirable outcome.

Should you flip pork in a crock pot? ›

Close the Proofer and allow the pork to cook for a total of 10 or 11 hours. Midway during the slow cook process you can turn the pork over once. After 10 hours check the interior of the pork with a thermometer. We recommend a temperature of 195-200 °F / 90-93 °C for tender, juicy pork which pulls apart easily.

Do you flip a pork roast in the crock pot? ›

Cover with a lid and cook on low for 10 hours, flipping the pork butt over halfway through. Note: it's important to not overcook the pork butt, or it'll make the pork tough and stringy.

Should meat or vegetables go in crockpot first? ›

Fill the crock pot at least half full and no more than two-thirds full. Thaw frozen meats and vegetables before placing in the crock pot. Place dense vegetables in crock pot first, such as carrots and potatoes, since they take longer than meats to cook.

Does pork loin get more tender the longer you cook it? ›

At 400 degrees F, a 1-pound pork tenderloin will cook in 8 to 10 minutes after being seared on the stove. Unlike tough, fatty cuts of meat (like the shoulder used for Slow Cooker Pulled Pork), leaner cuts like pork tenderloin do not become more tender the longer they cook. Use a meat thermometer to be sure.

How do you moisten a pork loin? ›

Place your pork loin fat side up in your roasting pan. By having the fat on top, you're allowing the fat layer to baste the roast as it cooks. This is the step that keeps the pork from becoming dry and tough! Cook the pork loin for 10 minutes in the 400-degree oven.

Do I need to rinse pork loin before cooking? ›

Washing beef, pork, lamb, or veal before cooking it is not recommended. Bacteria in raw meat and poultry juices can be spread to other foods, utensils, and surfaces. We call this cross-contamination.

Does meat in crock pot need to be covered with liquid? ›

Water or liquid is necessary to create steam. When cooking meat or poultry, the water or liquid level should cover the ingredients to ensure effective heat transfer throughout the crock. Some manufacturers of slow cookers recommend adding liquid to fill the stoneware 1/2 to 3/4 full.

The pork should be only partially submerged, with some of the pork remaining above the surface of the liquid.
